Corn, Bacon, & Potato Chowder Soup Recipe

 Taco Tuesday is a Recipe that I found on Pinterest.  It looked and sounded delicious but me being me, added, added some more, & then a little bit more, until I turned the recipe into my own.  :)  

So here is my version of the Weight Watcher Chowder:  Oh yea, I  should warn you mine isn't a Weight Watcher version...


  • 1 medium uncooked potato
  • 1 tablespoon butter
  • 1/2 cup(s) uncooked celery, chopped
  • 1/4 cup(s) uncooked onion(s), chopped (or 1 large shallot)
  • 1 1/2 cups frozen corn 
  • 1 cup(s) sweet red pepper(s), diced
  • 4 oz uncooked Canadian-style bacon, diced
  • 2 cup(s) whole milk
  • 1 can chicken broth
  • 1 1/2 tablespoons of chicken base
  • 1/2 tsp table salt
  • 1/4 tsp black pepper
  • 1 1/2 tablespoons corn starch
  • 5 to 10 shakes of  hot pepper sauce, or to taste
  • Instructions
  • Melt butter in a large sauce pan. Add celery, onion, corn and red pepper; sauté over medium-high heat for 5 minutes.
  • Meanwhile, chop potato into fine pieces & bacon.
  • Stir bacon, chicken broth, chicken base, and potato into saucepan; Season with salt, pepper and hot pepper sauce; stir to combine. Cover and simmer for about hour and half on low.  About 10 minutes before serving, combine cold milk and corn starch, add to the hot soup and stir until thickened.  
  • Serve with warm bread!
